Sure I got permission to do so:

 

Cheater Chicken Pot Pie

 

Pillsbury refrigerated pie dough (you’ll use 1 of the 2 rolls of dough)

Cooking Spray

1/8 teaspoon salt

2 tablespoons flour

1 teaspoon rubbed sage

¼ teaspoon salt

¼ teaspoon black pepper

8 oz of chick breast tenders cut into bite sized pieces

1 ¼ cups water

1 ½ cups frozen mixed veggies

1 cup mushrooms quartered

1 can condensed reduced fat reduced sodium cream of chicken soup

 

Preheat oven to 425

Cut circles of dough the size of your baking dishes. Individual ones work nicely or it can be made in one large casserole. Spray baking sheet lightly with cooking spray. Sprinkle dough evenly with 1/8 teaspoon salt. Pierce tops of dough with a fork and bake at 425 for 8 minutes until golden

 

Combine flour, sage, ¼ teaspoon salt and pepper in zip top plastic bag. Add chicken. Seal bag and toss to coat. Heat large nonstick skillet coated with cooking spray over medium heat. Add chicken mixture and cook 5 minutes, browning on all sides. Stir in water, scraping pan to loosen browned bits. Stir in veggies, mushrooms and soup and bring to a boil. Reduce heat, cook 10 minutes. Spoon 1 cup chicken mixture into each of the ramekins or bowls: top each service with a piecrust. Serve while hot.
