Some patterns call for pulling the yarn "hair" through the head before stuffing and then knotting the ends on the inside. Don't know if that was the kind of help you were looking for. :)

I've used a couple of methods for doll hair. One, I laid long strands across the head side to side and sewed down the centre. That was hair I braided at each side.

The other, the one I use most, is making 'fringe' hair. Cut many lengths of hair, slightly more than double how long you want the hair to be. Fold one piece in half, working around posts of stitches (or in free loops you have left just for this), insert hook in stitch, catch fold of yarn and pull partway through. Yarn over with the two tails, pull through the loop tightly.

Depending on how thick you would like the hair, you could work every row/round, or every other row/round.

When finished, trim to even out the hair.
