I assume everything in the ( ) means *1 DC in the next DC, 2 DC in the following DC, repeat from * around.

The use of ( ) or [ ] is another way to indicate a repeat.  Link on how to read a crochet pattern , see the section on Parentheses, Asterisks, and Brackets.

Edited to add, TECHNICALLY if you are meant to increase by 1, you'd put 2 stitches into 1.  It is also possible that the designer meant to add 2 stitches to the total, which would mean to put 3 into 1 stitch.  Does the item give a tally of the stitches you should have at the end of that row/round?  Does the pattern have a 'stitch definition' or 'special stitches section' that defines it?  I am fairly sure the intention was to put 2 DCs into 1 stitch, tho.
