Tip from the above pattern:

Making adjustments to the dimensions of the blanket is simple, as the pattern is worked diagonally until the desired blanket width is achieved before decreasing rows are begun.

When I do these, I just keep doing the beginning rows increasing both sides until it is the width I want, and then start the rows that decrease on one side until the long side is as long as I want the afghan, and begin squaring it off. 

 

If you want a very specific and regular striping pattern though, I guess you could do a gauge swatch making a rectangle and more or less calculate it from that.
