The simplest thing to do would be to add another couple of rounds of stitches that will take an 8" square to a 10" square.  Possibly 2 rows of dc?  Make a small sample swatch to see if 2 rows of dc is 1", and you will know that 4 rows (2 on one side of the square and 2 on the other) will give you the 2" you need.  If your 2 rows are more than 1", you might try 1 row of dc and 1 row of sc.  Less than 1", try a row of dc and a row of tc.
