That is one problem with flat "knitted" items, the edges tend to curl. If you go to this site you can watch a movie that shows you how to do a "purl" stitch on your loom. If you do the first and last 2-3 stitches as "purl stitch" on every row, it will help to conquer the curl. You can also alternate rows, do one knit and one purl.

 

Crocheting around the edge will help some, also blocking your scarf will help, but the curl is the tendency of flat knitted items.
