If you're doing single crochet, do it in the round and turn after each join.  That'll keep the seam in a nice, straight line.  If you just join and chain one and keep going, the seam does a little leaning... ;)

A single crochet beanie is definitely possible - I've made some.  It sounds like you either have too many stitches or your stitches are getting bigger (as in, your tension has changed) as you've done subsequent rounds.

 

Depending on how many stitches you started with, you should increase each following round with that many stitches (so if you started with - say - 10 stitches, round 2 should have 20 stitches, round 3 should have 30 and so on) until you get to the point where you're ready for the beanie to start looking like a bowl... then you either stop increasing or you increase VERY SLOWLY (perhaps 4 or 5 stitches per round) to get a nice round shape... I hope that makes sense.

 

What type of pattern are you using?  Or are you just winging it?  :?
