Est! Est, Est, This is Latin and means literally, It is… Many many years ago—middle ages-- a bishop was traveling to Rome, who was a lover of good wine, sent a companion ahead to check out Inns along the way. He was to taste the wines available and mark those whose wine was acceptable with the word Est. When he found an inn with exceptional wine, he wrote EST, EST, EST on the wall. The bishop when he came along agreed whole-heartedly, and so delayed his travels so long he died right there. To this day they pour wine on his grave as a tribute. Wow, all that just to say I like your work a lot.
