Graph Program?

what programs do you guys use to turn pictures into graphs? I'm interested in try a graph gahn and have a pic in mind but need a program that will let me make it big enough to figure everything out since I've never done a graph before. So if any of you could help me out I would greatly appreciate it.

I purchased PCStitch based on someone's recommendation here. Just the basic version. I've only made one chart with it, but it's turned out really well.
