Do you have a picture of the mascot? If so, print it on graph paper. Each square would represent one or two stitches and the mascot itself would tell you when and where to change colors.

 

I'm new to this type of thing too, and wouldn't you know my printer ran out of colored ink when I was trying to print an adorable giraffe for a child's afghan project somewhere in the future.

 

You will get a LOT of helpful hints from seasoned crocheters who do this type of thing all the time. I think it's an exciting way to make one-of-a-kind pieces without following commercial patterns.
