Anyone know of a website (or book even) that has patterns for complex amigurumi characters?

Those amigurmi absolutely stun me, but no pattern!

I'm afraid you won't find patterns for those. Those are very very OOAK items that sell for around $175 a piece.

 

They are stunning though.

I have used a translated cat pattern

 

It serves as a good foundation. After you've completed the patter as stated you can get creative and make it into what ever your heart desires...

 

Also there is a free Amigurumi Guy pattern on Crochet Me that can also be helpful in your journey.

She's incredibly talented. I've seen her work before. I suppose you just start with a basic pattern and keep practicing (and use your imagination). She's quite an inspiration.

those are very complex looking! Very fancy but I am sure they would drive me batty! Not that that would be too difficult.
