One way to tell if you are adding or subtracting stitches is to look at your fabric at the bottom, pick a stitch say 5 stitches from one edge and 'trace' that stich's column of stiches up.  Moss stitch is an easy one to eyeball, if it is hard to tell put a straight edge along the interior of that 5th stitch, and see if it becomes the 10th stitch or 'falls off the edge' 5 rows up.  Do this on both sides--this is a common 'help' topic here and I've seen blankets that go   /   \  or /  | if losing stitches on 1 or both sides or \  /  or  |  / if gaining on one or both sides, or sometimes /  / gain on 1 side, lose on another.

Sometimes when a blanket gets heavier, or your mood changes, your tension can change, too.

It can't hurt to put a stitch marker in the end stitch and move it up each row, in case you are missing the last stitch.

There are a couple of (slight) variations of moss stitch - are you doing a free one on the 'net, that you can link to?
