I saw a few, but these are examples that didn't appear to necessarily made in a contiguous piece.  There was at least one other similar one on Pinterest but I won't link to Pinterest due to copyright issues

If it's one of those, or similarly done in blocks of color, you could make them contiguously by using multiple balls of yarn at the same time.  Since they are rectangles and you are working back and forth, when you work across the front with (example) white, blue, white, when you turn, the white will be waiting for you to continue, the blue will have been dropped exactly where you need to pick it up again, and same with the second white ball.

 

When you turn a piece with several yarns attached, you want to turn it in alternating directions each time; this way the yarn will only be twisted 1 turn or not twisted ( if you turn the same way each time, you will have a twisted mess ).

 

Neither of these have much of a border, though, unless you mean the popcorn stitch, but I think the boxy frames really add to the appeal.

Ah, the first one I picked.  And looking at the projects quickly, at least 1 person made it all in 1 color, and undoubtedly contiguously.   A few omitted the side borders but kept the rows designs, one turned it into a rather cute 'minion' theme.

 

And how cute is the yellow & black one? Reminds me of a bumble bee!
