Lion Brand has a baby hooded poncho with this stitch. I made it a few years ago for my son. I'll see if I can find the link and post back if I do.

There is a free pattern on Ravelry that looks like that waffle stitch, which, yes, is constructed from Front and Back post double crochets that alternate.
